  • 2 oz Hayman's London Dry Gin
  • 1⁄4 oz Martini Extra Dry vermouth

How to make:

Ingredients:60ml Hayman's Dry Gin7.5ml Rosemary-infused Martini Dry Vermouth 15ml Olive Brine7.5ml Everything Bagel Spice Syrup 3 cucumber slices Instructions:Add cucumber slices into a mixing glass or Yari (mixing tin) and muddle.Add the rest of the ingredients (not the truffle oil) ingredients into the mixing tin.Stir until well-chilled.Fine strain into a chilled coupe glass.Garnish with a blue cheese-stuffed olive and a cornichon skewer & 2 drops of truffle oil.Rosemary-Infused Dry Sherry300ml Dry Sherry3-4 sprigs of fresh rosemaryInstructions:Infuse rosemary in dry vermouth for 36-48 hours.Strain out the rosemary before using.Everything Bagel Spice Syrup10g white sesame seeds10g black sesame seeds10g poppy seeds5g dried garlic5g dried onion237ml honey237ml waterInstructions:Boil all ingredients together.Once boiled, fine strain to remove solids.Cool before use.
