Ingredient

  • 1 1⁄2 oz Tanqueray London Dry Gin
  • 1⁄6 oz Monin Pure Cane Syrup
  • 1⁄6 oz Sugar syrup 'rich'
  • 2 dash Angostura Aromatic Bitters
  • 1⁄2 oz water
  • 1⁄2 oz Chilled water

Glass:

Serve in a Nick & Nora glass

Prepare:

  1. Select and pre-chill a NICK & NORA GLASS.
  2. Prepare garnish of lemon zest twist.

How to make:

  1. STIR all ingredients with ice.
  2. FINE STRAIN into chilled glass.

Garnish:

  1. EXPRESS lemon zest twist over the cocktail and use as garnish.

Review:

The balance of bitters to sugar is key to the success of this cocktail. Use a Japanese dasher bitters bottle and measure your 2:1 sugar syrup judiciously and you'll have made something special. Go easy while spraying the lemon zest over the drink – too much lemon oil will wreck its fine balance.

History:

The name of this vintage variation on a Pink Gin cocktail is pronounced 'Gin Fight' in the Malay language ("pahit" means bitter).
