Ingredients
- 2 1⁄2 oz Bacardi Carta Blanca Superior White Rum
- 1⁄2 oz Cream of coconut
- 3 oz Pineapple juice
- 1⁄4 barspoon Xanthan gum (E415) optional
Method
Glassware:
Serve in a Collins glass
Prepare:
- Select and pre-chill a COLLINS GLASS.
- Prepare garnish of pineapple wedge, Luxardo Maraschino Cherry and mint sprigs.
Method:
- DRY BLEND (without ice) first 3 ingredients on slow setting and then gradually add Xanthan gum while continuing to blend.
- Add 7oz scoop of crushed ice and BLEND some more.
- POUR into chilled glass.
Garnish:
- Garnish with mint sprigs bouquet and pineapple wedge skewered with cherry on rim.
History:
Bahia is one of Brazil's 26 states. It is also a pre-Prohibition drink containing dry vermouth, sherry, absinthe and bitters. This more recent Piña Colada-style offering has more mass market appeal.
